- 8 ounces of tomato purée (Muti's 24.5 oz glass jar is my preferred brand)

- 1 onion, finely diced

- 8 cloves of garlic, minced

- 4 tablespoons of Fire Cider

- 4 cups of chicken stock

- 1 tablespoon of cumin

- 2 Bay leaves

Garnish:

- Lime wedges

- Fresh cilantro leaves


Instructions:

1. Heat a large skillet over medium-high heat and add the oil. Once the oil is hot, add the rice and diced onion. Cook until rice is golden, and the onions become slightly translucent.

2. After toasting the rice to a lovely golden hue, add the chicken and tomato bullion cubes, Fire Cider, and chicken stock. Stir well and bring the mixture to a boil.

3. Add the minced garlic and the bay leaves. Give one final stir. Cover the skillet and reduce the heat to low. Allow it to simmer for 20 minutes.

4. Turn off the burner and let sit, covered, for an additional 15-20 minutes. It's crucial not to remove the lid during this resting period. This step ensures perfectly fluffy rice.

5. Just before serving, fluff the rice with a fork to separate the grains.

6. Garnish your Mexican Rice with a squeeze of fresh lime juice and a generous sprinkling of chopped cilantro.
